Oleonauta
Born in 2013 as an entrepreneurial project for the enhancement and promotion of extra virgin olive oil from an idea of Simona Cognoli. It takes shape in the first oil shop in Rome, selected showcase for the presentation of the best Italian labels to the public of consumers and professionals. The oil shop soon became a cultural space where courses and cultural meetings are regularly offered (A tu per tu and Voci dell’Olio from 2014 to 2016). In the following years Oleonauta closes the space in Rome while signing, as author and organizer, many events of national success as The Oleoteca and seminars on oil for The Symposium at the Salone delle Tre Fontane in Rome (editions 2015, 2016, 2017, 2018), The Oleotec of Wine and Art that Passion for CT Consulting Events (2016), the Oleoteca of Vinòforum in 2018 in partnership with Vinòforum Academy, Evoluzione- percorsi per l’extravergine di qualità (editions 2017, 2019 and 2020) in partnership with La Pecora Nera Editore an L’oleoteca dei monovarietali (2019) for La Pecora Nera Editore and Paky Livieri de Il Sorì.
Constant participation in solidarity events, such as the Bio Sagra for kids (editions 2017, 2018, 2019, 2020) and Con il Cuore nel Piatto (editions 2017, 2018, 2019, 2020).
The focused attention towards the production and sharing of educational content has allowed Oleonauta to develop since 2017 interesting collaborations with the University of Roma Tre, through the proposal of seminars and internships for students of the Degree Course in Enogastronomic Sciences and Cultures. From 2020 Oleonauta presents Olionline, an interactive training path accessible through a web platform and Oliveoil Touring, a set of initiatives closely related to oil tourism.
Around Oleonauta’s projects there are olive growers, oil millers, engineers, tasters, journalists, restaurateurs, doctors, researchers, professors, educators, artists and many other experts in every field who are always available for dialogue and discussion. Without them, Oleonauta would not be the reality it is today, rich in experience and involved in many initiatives in the sector.

Interested in food and wine since my university years, I qualified professionally as Manager of agritourism companies (Informat-Lazio Region) and then I approached the world of extra virgin olive oil with growing interest and passion. So I train as a Taster of virgin and extra virgin olive oil (University of Tuscia) and as a Taster of table olives (UMAO course) and then as an expert in Marketing of oil (UNAPROL course), Crusher Technician (ASSOPROL course) and Pruner expert (UMAO course). I continually invest in my education to enhance job skills. For this reason, I attend industry conferences and meetings as both a speaker and an auditor. I participated in the Neuromarketing course and the Wine Marketing course, both organized by Forma Camera-Azienda Speciale della Camera di Commercio di Roma per la formazione imprenditoriale and recently in 2020 in the Course in Food Legislation and Scenario Analysis, organized by CNA and Fondazione ECIPA.
I am enrolled in theNational List of expert technicians tasters of virgin olive oil and I work in the Professional Tasting Committee of the Chamber of Commerce of Rome. Tasting since 2015 for the final selections of Gambero Rosso’s Guida degli Oli d’Italia and since 2020 in the panel of the final selections for Carlo Zucchetti’s Guida Oli della Tuscia. I participated as a judge in the International L’Orciolo d’Oro Competition (2016 and 2017 editions) and was convened as an international judge for the Olive Japan Competition (2020 edition) and the Evo-Iooc Competition (2020 edition).
Co-author of the book “Olio, lo straordinario mondo dell’olio extravergine di oliva” (Oil, the extraordinary world of extra virgin olive oil), I write for the Oleonauta blog and the monthly paper magazine Gusto Sano. I collaborate with Radio Food as author of the EVO pill, a weekly appointment of culture and information about extra virgin olive oil. I regularly carry out consulting activities for the ho.re.ca. sector. and didactic activities at cooking schools, hotel institutes and in courses for tasters of extra virgin and virgin olive oil organized throughout the country by ENUIP (Ente Nazionale UNSIC Istruzione Professionale).
I am the author of Olionlineand CucinaExtr@ (online courses and tastings) and OliveOil Touring (tourist experiences related to extra virgin olive oil). I contributed as an industry expert to the documentary film Obsessed with olive oil, produced by Abandoned Grove.
Since 2013 I am the owner of Oleonauta, an activity for which I still invest most of my work and daily commitment.
